Add Copilot to "AI coding assistants" in README (and maybe JetBrains or other IDEs? #379

Currently https://github.com/stacklok/codegate?tab=readme-ov-file#ai-coding-assistants only mentions Continue. Should we add Copilot?

Also, it only mentions VS Code and we may want to add JetBrain.

Good point that we should test JetBrains with Copilot. We did test JetBrains with Continue and that seemed to have worked well.
