Since I want to do v4.0.0 sometime, it'd be nice to clean up some slightly messy bits of the API. This is a catch all issue to track those things:

OperationBuilder requires variables but contains it as an Option. Could probably just make the query/mutation/subscription functions take variables, it'd be easier?
